Quick Peanutbutter Cake
1 (2 layer size-although what other size is there?)
yellow or
spice cake mix
1/3 cup peanutbutter
1/3 cup light cream
2 small bag of mini chocolate chips, divided
1
1/2 cups brown sugar
1 cup flaked coconut
1 cup of peanuts (optional)
Prepare cake according to the directions
on the box, but
toss in a small bag of mini chocolate chips. Bake in a pan
(13 x 9 x 2 inch ) ; cool for 5 minutes.
Meanwhile, combine
peanutbuter, cream, brown sugar and mini chocolate chips
in a sauce pan; cook and stir until mixture
is boiling. Spread
over the cake; broil about 4 inches from the heat, for 2 to 3
minutes or until the frosting is bubbly.
Top with the coconut flakes;
broil just until the coconut is toasted. (shouldn't take long.)
