Cat Who Looked In The Mirror Maple Scones - By John

Insructions: 1 cup old fashion style oats
3/4 cup flour
1/4 sugar, + more for sprinkling on top, divided
1 tsp baking powder
6 TBS salt free butter, cut into small pieces
1/4 cup heavy cream, +more for brushing the tops
1/4 cup pure mayple syrup

Preheat oven to 350 f. degrees. Line a baking sheet with parchment paper.
In a large bowl, combine oats, flour, sugar and baking powder; whisk to combine. Cut in the butter u nitl it resembles coarse meal. Sprinkle the heavy cream and maple syrup over mixture; blend untl a ball of dough begins to form. (If dough is too dry, add more cream, 1 tsp at a time.)
Turn the dough out onto a floured board and roll knead until smooth, about 10 strokes. Pat the dough in a 6 inch diameter circle, cut into equal wedges. Place on the prepared baking sheet and brush the tops with the cream. Sprinkle with sugar. Bake 15 to 20 min utes, or until golden brown. Cook on a rack. Makes 10 to 12. Can be served with peach preserves or favorite jelly.
